• 1/4 cup olive oil

  • 1 tablespoon apple cider vinegar

  • 2 teaspoons honey

  • 1 teaspoon whole grain mustard

  • 1/2 teaspoon sea salt

  • 1 large apple, cored and cut into matchsticks

  • 1 kohlrabi, peeled and cut into matchsticks

  • 1/4 cup thinly sliced red onion

  • 1/4 cup toasted hazelnuts, chopped

  • 1/4 cup finely chopped parsley

Combine olive oil, apple cider vinegar, honey, mustard and salt at the bottom of a medium sized bowl. Whisk together to combine.

Add apple sticks, kohlrabi sticks, red onion, hazelnuts and parsley. Toss everything well to coat with dressing. Add additional salt and black pepper to taste.
