Ingredients:

  • 1 large rutabaga, peeled and cut into 3/4 inch cubes

  • 4 tablespoons unsalted butter

  • salt

  • black pepper

  • juice of 1/2 lemon

  • 2 tablespoons finely chopped fresh parsley

Preheat oven to 450 degrees. Melt butter in a saucepan over medium heat until it begins to foam and eventually brown. Toss rutabaga in the browned butter with salt and pepper, then spread onto baking sheet. Roast in the oven for 25 to 40 minutes or until browned and tender. When finished cooking transfer rutabaga into a serving dish and toss with lemon juice and parsley.
