• 1 watermelon, cut into bite size chunks

  • 1 cucumber, peeled and chopped into small chunks

  • 1/4 cup fresh mint, roughly chopped

  • 1/4 cup fresh basil, roughly chopped

  • 1/2 cup feta cheese, crumbled

  • 2 tablespoons white wine vinegar

  • 2 tablespoons olive oil

  • salt to taste

Chop watermelon, cucumber, mint and basil, then combine in a large bowl. Crumble feta cheese on top and toss everything well to combine. Add white wine vinegar, olive oil and salt to taste and mix well. Chill for 30 minutes before serving.
