Fresh Kale Salad

  • Fresh kale

  • Bell peppers

  • Cuts of one or more succulent fruit, e.g. mango, orange or peach.

Finely chop fresh kale – it brings out the brilliant green.

Add diced bell peppers and fruits.

Salt, pepper and minced garlic to taste.

Toss with your favorite vinegar (or lemon juice) and olive oil. Let sit at least an hour if possible.

Great the next day, too.
