Miso Glazed Carrots

  • 1-2 bunches carrots, sliced into long strips

  • 3 cloves garlic minced

  • 1 tablespoon olive oil

  • 1/4 teaspoon salt

    Glaze:

  • 1 tablespoon sesame oil

  • 1 tablespoon miso (white or red)

  • 1 tablespoon honey

  • 1/2 teaspoon cayenne pepper or paprika for a less spicy version

Heat olive oil in a medium skillet, add garlic and brown until fragrant, approximately 1 minute stirring constantly. Add carrots and salt. Cover carrots for a couple of minutes with a dash of water will cause them to steam and soften. Remove cover and continue to saute carrots for about 3-5 minutes. Meanwhile, mix together sesame oil, miso, honey and pepper or paprika. Once carrots have gotten a browned color, add the miso glaze and continue to cook for an additional 2 minutes. 

Serve with a garnish of thinly chopped scallions or cilantro. 

The glaze can also be used to make oven roasted carrots. For roasted carrots, first toss the carrots in olive oil and salt, then spread on baking sheet and roast for 25 minutes at 350 degrees. Remove carrots from oven, brush on glaze, and continue to roast for additional 15-20 minutes.

If you don’t have carrots on hand, you can also use turnip greens, beet greens, kale or swiss chard, depending on what you have available.
