Beet Salad with Feta, Cucumber and Dill

  • 2 cups roasted beets, cut into 1/2 inch pieces

  • 1 medium cucumber, halved and thinly sliced

  • 1 tablespoon lemon juice

  • 1/2 tsp salt

  • 3 tablespoons olive oil

  • 4 oz. feta cheese, crumbled

  • 1/4 cup fresh dill roughly chopped 

Prepare the dressing by first whisking the lemon juice and salt in a small bowl. Once the salt has dissolved, continue whisking while drizzling in the olive oil. Once ingredients are combined, pour half the dressing over the beets in your serving bowl and toss. Then chop the cucumber, dill and feta cheese while the beets marinade. Before serving add remaining ingredients and the rest of the dressing. Toss together and serve.
